14 oz udon noodles
2 tbsp vegetable oil
5 cloves garlic
1 inch ginger
0.5 tsp red pepper flakes
0.25 cup soy sauce
2 tbsp hoisin sauce
1 tbsp rice vinegar
1 tsp sugar
2 tbsp water
3 stalks green onions
1 medium bell pepper

Instructions

    Cook udon noodles according to package directions. Drain and rinse with cold water.

    While noodles cook, mince garlic and grate ginger. Slice bell pepper and green onions. In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sugar, water, and red pepper flakes.

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add garlic, ginger, and red pepper flakes and stir-fry for 30 seconds until fragrant.

    Add sliced bell pepper and stir-fry for 3-4 minutes until crisp-tender.

    Add the cooked udon noodles and the prepared sauce to the skillet. Toss to combine and heat through for 2-3 minutes.

    Stir in most of the green onions, reserving some for garnish.
