
Garlic Mashed Potatoes
Creamy and flavorful mashed potatoes infused with roasted garlic.

Preheat oven to 400°F. Cut the top off the head of garlic to expose the cloves.

Place the garlic head on a small piece of foil, drizzle with 1 tbsp olive oil, and wrap tightly. Bake for 40 minutes, or until cloves are soft and golden.

While garlic bakes, peel and quarter the potatoes. Place in a large pot and cover with cold water. Add 1 tsp salt.

Bring to a boil over high heat, then reduce heat to medium and simmer for 15-20 minutes, or until potatoes are fork-tender.

Drain potatoes well. Return to the pot.

Squeeze the softened garlic cloves out of their skins into the pot with the potatoes.

Add butter, milk, remaining 0.5 tsp salt, and black pepper to the pot.

Mash the potatoes and garlic until smooth and creamy. Add more milk if needed for desired consistency.
