1.25 cup vegetable broth
3 tbsp olive oil
2 tbsp lemon juice
0.5 cup fresh parsley
0.25 cup fresh mint
1 medium cucumber
1 cup cherry tomatoes
0.25 cup red onion
0.5 tsp salt
0.25 tsp black pepper

Instructions
