2 lbs chicken thighs
0.75 cup cornstarch
0.5 cup all-purpose flour
1.5 tsp salt
0.75 tsp black pepper
3 cup vegetable oil
1 cup orange juice
0.5 cup rice vinegar
0.25 cup soy sauce
0.5 cup sugar
3 cloves garlic
1 tbsp ginger
2 tbsp sesame seeds
1 tsp sesame oil

    Cut chicken thighs into bite-sized pieces. In a large bowl, toss chicken with 1 teaspoon of salt and 0.5 teaspoon of black pepper.

    In a shallow dish, combine cornstarch, all-purpose flour, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper. Dredge the chicken pieces in the flour mixture, ensuring each piece is evenly coated.

    Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering (about 350°F). Carefully add chicken in batches, ensuring not to overcrowd the pan. Fry for 4-6 minutes, or until golden brown and cooked through. Remove chicken with a slotted spoon and drain on paper towels.

    While chicken is frying, prepare the orange glaze. In a medium saucepan, combine orange juice, rice vinegar, soy sauce, sugar, minced garlic, and grated ginger. Bring to a simmer over medium heat, stirring until sugar dissolves. Cook for 5-7 minutes, or until the sauce slightly thickens.
