2 medium sweet potato
2 cans black beans
1 can diced tomatoes
4 cups vegetable broth
1 medium onion
3 cloves garlic
2 tbsp chili powder
1 tbsp cumin
1 tsp smoked paprika
0.25 tsp cayenne pepper
1 tbsp olive oil
1 tsp salt
0.5 tsp black pepper

Instructions

    Peel and dice the sweet potatoes into 1-inch cubes. Finely chop the onion and mince the garlic.

    Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.

    Drain and rinse the black beans.

    In a slow cooker, combine the diced sweet potatoes, drained black beans, diced tomatoes (undrained), vegetable broth, sautéed onion and garlic mixture, chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper.

    Stir everything to combine. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until sweet potatoes are tender.
