2.5 cups all-purpose flour
1 cup unsalted butter
0.5 cup ice water
6 large apples
0.75 cup granulated sugar
0.25 cup brown sugar
2 tbsp all-purpose flour
1 tsp cinnamon
0.5 tsp nutmeg
1 tbsp lemon juice
1 tsp salt
1 large egg
1 tbsp milk

Instructions

    Make the crust: In a large bowl, combine 2.5 cups of flour and 1 tsp salt. Cut in 1 cup of cold unsalted butter until the mixture resembles coarse crumbs. Gradually add 0.5 cup ice water, mixing until the dough just comes together. Divide dough in half, flatten into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Prepare the filling: Peel, core, and slice 6 large apples. In a large bowl, toss the apple slices with 0.75 cup granulated sugar, 0.25 cup brown sugar, 2 tbsp flour, 1 tsp cinnamon, 0.5 tsp nutmeg, 1 tbsp lemon juice, and a pinch of salt.

    Preheat oven to 400°F. Roll out one disk of dough and line a 9-inch deep-dish pie plate. Pour the apple filling into the crust.

    Roll out the second disk of dough and place it over the filling. Crimp the edges to seal and cut vents in the top crust. Brush the top crust with a mixture of 1 egg beaten with 1 tbsp milk.

    Bake for 20 minutes at 400°F. Then, reduce oven temperature to 375°F and bake for another 30-40 minutes, or until the crust is golden brown and the filling is bubbly. Cover edges with foil if they start to brown too quickly.
