
Loaded Barbecue Chicken Nachos
A creative take on classic nachos, featuring tender shredded chicken tossed in barbecue sauce, piled high on crispy tortilla chips with a variety of delicious toppings.

Boil or bake chicken breasts until cooked through. Shred the chicken using two forks. In a bowl, toss the shredded chicken with barbecue sauce until evenly coated.

Preheat oven to 375°F. Spread tortilla chips in a single layer on a large baking sheet.

Sprinkle half of the cheddar and Monterey Jack cheeses over the tortilla chips. Top with the barbecue chicken mixture, rinsed and drained black beans, and corn kernels.

Top with the remaining cheddar and Monterey Jack cheeses. Finely dice the red onion and jalapeno and sprinkle over the cheese. Bake for 10-12 minutes, or until the cheese is melted and bubbly.

While the nachos bake, chop the cilantro and zest and juice the lime. In a small bowl, combine sour cream with lime juice and cilantro. Stir to combine.

Remove nachos from the oven. Dollop with the lime-cilantro crema. Serve immediately.
