
Ground Lamb Stuffed Bell Peppers
Bell peppers stuffed with a savory mixture of ground lamb, rice, and spices, baked until tender.

Add about 1/2 inch of water to the bottom of the baking dish. Cover the dish tightly with foil.

Spoon the lamb mixture evenly into the prepared bell peppers. Place the stuffed peppers in a baking dish. Drizzle with the remaining 1 tablespoon of olive oil.

Preheat oven to 375°F. Slice the tops off the bell peppers and remove the seeds and membranes. You can reserve the tops to bake with the peppers if desired.

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ground lamb and cook, breaking it up, until browned. Drain off excess fat.

Add the chopped onion and minced garlic to the skillet with the lamb. Cook until softened, about 3-5 minutes.

Stir in the cooked rice, diced tomatoes, tomato paste, beef broth, oregano, salt, and black pepper. Cook for 2-3 minutes until the mixture is heated through and well combined.
