
Classic Butter Chicken
A rich and creamy Indian curry made with tender chicken simmered in a spiced tomato and butter sauce.

Instructions

Cut chicken thighs into bite-sized pieces.

In a bowl, combine chicken pieces with yogurt, lemon juice, 1 tsp cumin, 1 tsp coriander, turmeric, cayenne pepper, and 0.5 tsp salt. Mix well.

Marinate for at least 30 minutes, or refrigerate for up to 2 hours.

Dice the onion. Mince the garlic and ginger.

Melt 4 tbsp of butter in a large pot or Dutch oven over medium heat. Add the diced onion and cook until softened, about 5-7 minutes.

Add the minced garlic and ginger to the pot and cook until fragrant, about 1 minute.

Stir in the crushed tomatoes, remaining 0.5 tsp cumin, remaining 0.5 tsp coriander, remaining 0.5 tsp salt, and garam masala. Bring to a simmer and cook for 10 minutes, stirring occasionally.

Add the marinated chicken to the pot. Stir to combine with the sauce.

Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until chicken is cooked through.

Stir in the heavy cream and remaining 4 tbsp butter until the butter is melted and the sauce is smooth.
