Instructions
- 1
In a large bowl, whisk together flour, 1 tbsp granulated sugar, and 0.5 tsp salt. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. Gradually add ice water, 1 tbsp at a time, mixing until the dough just comes together.
- 2
Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- 3
While the dough chills, prepare the caramel. In a saucepan over medium heat, combine 0.5 cup granulated sugar and 2 tbsp water. Cook, stirring until sugar dissolves, then stop stirring and let it simmer until it turns an amber color. Carefully whisk in 4 tbsp butter and 0.5 cup heavy cream. Stir in 0.25 tsp salt. Let it cool.
- 4
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- 5
In a bowl, toss the sliced pears with 0.25 cup brown sugar, 1 tbsp cornstarch, and 0.5 tsp cinnamon.
- 6
On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer the dough to the prepared baking sheet.
- 7
Spread a thin layer of the cooled salted caramel over the center of the dough, leaving a 2-inch border. Arrange the pear slices over the caramel. Fold the dough border up and over the edges of the pears, pleating as needed.
- 8
Brush the folded dough with the beaten egg. Bake for 35-45 minutes, or until the crust is golden brown and the pears are tender.
