2 6-oz salmon fillets
3 tbsp gochujang
2 tbsp honey
1 tbsp soy sauce
1 tbsp rice vinegar
1 tsp sesame oil
2 cloves garlic
1 inch ginger
1 cup sushi rice
1.5 cup water
1 cup broccoli florets
0.5 cup shredded carrots
0.5 cup cucumber
2 stalks scallions
1 tsp sesame seeds

Instructions

    Cook sushi rice according to package directions.

    While rice cooks, prepare the gochujang glaze. Mince the garlic and grate the ginger.

    In a small bowl, whisk together gochujang, honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger.

    Pat the salmon fillets dry and season with salt and pepper.

    Heat a skillet over medium-high heat with a tablespoon of cooking oil. Sear salmon for 4-5 minutes per side, until cooked through.
