4 6oz salmon fillets
2 tbsp olive oil
4 cloves garlic
0.5 cup sun-dried tomatoes
1 cup heavy cream
0.25 cup parmesan cheese
2 cups spinach
1 tbsp lemon juice
1 tsp salt
0.5 tsp black pepper

Instructions

    Pat salmon fillets dry and season with salt and pepper.

    Heat olive oil in a large skillet over medium-high heat. Sear salmon for 3-4 minutes per side until golden brown and cooked through. Remove salmon from skillet and set aside.

    Add minced garlic to the skillet and sauté for about 1 minute until fragrant.

    Stir in chopped sun-dried tomatoes and heavy cream. Bring to a simmer and cook for 3-5 minutes until the sauce slightly thickens.

    Reduce heat to low. Stir in parmesan cheese, spinach, and lemon juice. Cook until spinach wilts, about 1-2 minutes. Season with remaining salt and pepper to taste.
