2.5 cups all-purpose flour
1.5 cups sugar
1 tsp baking soda
1 tsp cinnamon
0.5 tsp nutmeg
0.5 tsp salt
3 whole eggs
1 cup vegetable oil
1 cup unsweetened applesauce
1 tsp vanilla extract

Instructions

Preheat oven to 350 degrees Fahrenheit and grease and flour a 9 x5 inch loaf pan.

In a large bowl, whisk together 2.5 cups flour, 1.5 cups sugar, 1 tsp baking soda, 1 tsp cinnamon, 0.5 tsp nutmeg, and 0.5 tsp salt.

In a separate bowl, whisk together 3 whole eggs, 1 cup vegetable oil, 1 cup unsweetened applesauce, and 1 tsp vanilla extract.

Peel, core, and dice the 2 piece apples into 0.5 inch pieces.

Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the diced apples.

Pour the batter into the prepared loaf pan and bake for 60 minutes.
