Cut chicken breasts into bite-sized pieces. Toss with 1 tablespoon of Cajun seasoning, salt, and pepper.

Heat olive oil in a large pot or Dutch oven over medium-high heat. Add seasoned chicken and cook until browned on all sides. Remove chicken and set aside.

Add minced garlic to the pot and sauté for 30 seconds until fragrant.

Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pot.
