
Curried Lentil Salad

Rinse the lentils. Combine lentils and vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until tender. Drain any excess liquid.

While lentils cook, finely chop the red onion, dice the cucumber, dice the bell pepper, and chop the cilantro.

In a large bowl, whisk together olive oil, lemon juice, curry powder, cumin, 0.5 tsp salt, and 0.25 tsp black pepper.

Add the cooked lentils, chopped red onion, diced cucumber, diced bell pepper, and chopped cilantro to the bowl with the dressing.

Toss everything gently to combine. Season with remaining 0.25 tsp salt. Let sit for at least 10 minutes before serving to allow flavors to meld.
