
Lemongrass Beef Fried Rice
A flavorful twist on classic fried rice, incorporating tender beef marinated with lemongrass and spices for an aromatic and satisfying meal.

Prepare the marinade: Finely mince the white parts of 2 lemongrass stalks, 4 cloves of garlic, and a 1-inch piece of ginger.

In a bowl, combine the minced lemongrass, garlic, ginger, 3 tbsp fish sauce, 2 tbsp soy sauce, 1 tbsp sesame oil, 1 tbsp brown sugar, 1 tsp salt, and 0.5 tsp black pepper. Whisk in 1 tbsp of vegetable oil.

Slice 1 lb beef sirloin thinly against the grain. Add the beef to the marinade, toss to coat, and let it marinate for at least 15 minutes.

Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for 2-3 minutes until browned. Remove beef from skillet and set aside.

Add the remaining 1 tbsp of vegetable oil to the skillet. Add 2 beaten eggs and scramble until cooked. Remove eggs and set aside.

Add another 1 tbsp of vegetable oil to the skillet. Add the cooked rice, frozen peas, and frozen corn. Stir-fry for 5-7 minutes until heated through.

Return the beef and scrambled eggs to the skillet. Add 1 tbsp soy sauce and 1 tbsp fish sauce. Stir everything together and cook for another 2-3 minutes until well combined and heated through.
