0.25 cup heavy cream
0.5 tsp salt
0.25 tsp black pepper
1 tbsp olive oil
0.5 medium red onion
0.5 medium bell pepper
0.5 medium zucchini
1 cup spinach
0.5 cup feta cheese
0.5 tsp oregano

Preheat oven to 350°F (175°C).

In a bowl, whisk together eggs, heavy cream, salt, pepper, and oregano.

Heat olive oil in an oven-safe skillet over medium heat. Add chopped red onion, bell pepper, and zucchini. Sauté for 5-7 minutes until tender-crisp.
