1.5 lbs chicken thighs
1 lbs potatoes
14.5 oz diced tomatoes
1 medium yellow onion
3 cloves garlic
1 inch ginger
2 tbsp vegetable oil
2 tbsp curry powder
1 tsp cumin
0.5 tsp turmeric
0.25 tsp cayenne pepper
1 tsp salt
0.5 tsp black pepper
1 cup water
0.5 cup fresh cilantro

    Peel and dice the potatoes into 1-inch cubes. Finely chop the yellow onion. Mince the garlic and grate the ginger.

    Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the chopped onion and sauté until softened, about 5-7 minutes.

    Add the minced garlic and grated ginger to the pot. Cook for 1 minute until fragrant.

    Stir in the curry powder, cumin, turmeric, cayenne pepper, salt, and black pepper. Cook for another minute, stirring constantly.
