1 ½ lb ground turkey
1 medium zucchini
1 medium shallot
3 clove garlic
1 large egg
½ cup feta cheese
¼ cup fresh dill
1 tsp dried oregano
1 tsp salt
½ tsp black pepper
2 tbsp olive oil
1 cup plain Greek yogurt
2 tbsp lemon juice
½ medium cucumber
1 cup cherry tomatoes
¼ small red onion
1 cup quinoa
2 cup vegetable broth

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Grate the zucchini using the large holes of a box grater. Squeeze out as much excess moisture as possible by wrapping it in a clean kitchen towel or cheesecloth.

    Finely mince the shallot and garlic.

    In a large mixing bowl, combine the ground turkey, squeezed zucchini, minced shallot, minced garlic, egg, crumbled feta cheese, half of the chopped fresh dill, oregano, salt, and pepper. Mix gently with your hands until just combined. Do not overmix.

    Roll the mixture into approximately 1.5-inch meatballs and place them on the prepared baking sheet. You should have about 20-24 meatballs.

    Bake for 20-25 minutes, or until the meatballs are cooked through and lightly browned.

    While the meatballs bake, prepare the quinoa according to package directions, using vegetable broth for extra flavor. Once cooked, fluff with a fork.

    Prepare the tzatziki sauce: Grate the cucumber and squeeze out excess moisture. In a small bowl, combine Greek yogurt, grated cucumber, the remaining fresh dill, lemon juice, and a pinch of salt and pepper. Stir well.
