Cook rice according to package directions. Typically, this involves combining rice and water in a saucepan, bringing to a boil, then simmering covered for 15-20 minutes until water is absorbed.

While rice cooks, prepare the chicken. Cut chicken breast into 1-inch cubes. Mince garlic. Zest one lemon and juice both lemons.

In a bowl, whisk together 2 tbsp olive oil, juice of one lemon, lemon zest, minced garlic, 1 tsp salt, 0.5 tsp black pepper, and dried oregano. Add chicken cubes and toss to coat. Let marinate for at least 10 minutes.
