
Slow Cooker Italian White Bean Soup With Pasta

Chop the onion, carrots, and celery. Mince the garlic. Remove Italian sausage from casings.

Heat olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Drain off excess fat.

Transfer the browned sausage to the slow cooker. Add the chopped onion, carrots, celery, and minced garlic to the slow cooker.

Add the diced tomatoes, rinsed and drained cannellini beans, chicken broth, oregano, basil, red pepper flakes, salt, and black pepper to the slow cooker.

Cover and cook on low for 6-8 hours or on high for 3-4 hours.
