
Creamy Cajun Chicken Pasta
A zesty and creamy Cajun-inspired chicken pasta dish with bell peppers, onions, and a rich, spiced sauce.

Stir in fresh parsley. Season with additional salt and pepper to taste if needed.

Cook fettuccine pasta according to package directions. Drain, reserving about 1 cup of pasta water, and set aside.

Cut chicken breasts into bite-sized pieces. Season with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.

Chop onion and bell pepper. Mince garlic.

Add chopped onion and bell pepper to the same skillet. Cook until softened, about 5-7 minutes. Add minced garlic and cook for 1 minute more until fragrant.

Stir in Cajun seasoning. Pour in heavy cream and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.

Reduce heat to low and stir in Parmesan cheese until melted and the sauce is smooth. Add the cooked chicken back to the skillet.

Add the cooked pasta to the skillet with the sauce and chicken. Toss to combine. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
