12 oz dark chocolate
1 cup unsalted butter
1.5 cup granulated sugar
6 unit large eggs
1 tsp vanilla extract
0.5 cup cocoa powder
0.25 tsp salt

    Preheat your oven to 325°F. Grease and flour a 9-inch round springform pan.

    Melt the dark chocolate and unsalted butter together in a double boiler or in the microwave in 30-second intervals, stirring until smooth. Let cool slightly.

    In a large bowl, whisk the granulated sugar into the slightly cooled chocolate mixture until well combined.

    Separate the eggs. Add the egg yolks to the chocolate mixture one at a time, whisking well after each addition. Stir in the vanilla extract.

    In a separate clean bowl, beat the egg whites with the salt until stiff peaks form.

    Gently fold about one-third of the beaten egg whites into the chocolate mixture to lighten it. Then, carefully fold in the remaining egg whites until just combined, being careful not to deflate the mixture.
