
Vietnamese Lemongrass Beef Stir-fry
Tender strips of beef marinated and stir-fried with aromatic lemongrass, garlic, and ginger, served over rice for a vibrant and flavorful Vietnamese classic.

Prepare the marinade: Finely mince 2 stalks of lemongrass (white part only), 4 cloves of garlic, and a 1-inch piece of ginger.

In a bowl, combine the minced lemongrass, garlic, ginger, 3 tbsp fish sauce, 2 tbsp soy sauce, 1 tbsp brown sugar, 1 tsp salt, and 0.5 tsp black pepper.

Slice 1 lb beef sirloin thinly against the grain. Add the beef to the marinade, toss to coat, and let it marinate for at least 15 minutes.

Slice 1 medium onion and 1 medium bell pepper.

Heat 2 tbsp vegetable oil in a wok or large skillet over medium-high heat.

Add the marinated beef to the hot skillet, working in batches if necessary to avoid overcrowding. Stir-fry for 2-3 minutes until browned and cooked through. Remove beef from skillet and set aside.

Add the remaining 1 tbsp of vegetable oil to the skillet. Add the sliced onion and bell pepper. Stir-fry for 3-4 minutes until tender-crisp.

Return the beef to the skillet with the vegetables. Toss to combine and heat through for 1-2 minutes.
