4 large russet potatoes
1 lb ground beef
1 medium onion
½ green bell pepper
2 clove garlic
½ cup ketchup
1 tbsp Worcestershire sauce
1 tsp Dijon mustard
1 tbsp brown sugar
1 tsp chili powder
½ tsp paprika
¼ tsp cayenne pepper
1 tbsp vegetable oil
½ tsp salt
¼ tsp black pepper
1 cup shredded cheddar cheese
½ cup sour cream
2 tbsp chopped fresh chives

Instructions

    Preheat oven to 400°F (200°C). Scrub the potatoes thoroughly and prick them several times with a fork. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a knife.

    While the potatoes are baking, prepare the sloppy joe filling. Finely chop the onion and green bell pepper. Mince the garlic.

    Heat vegetable oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.

    Add the chopped onion and green bell pepper to the skillet with the beef. Cook until softened, about 5-7 minutes.

    Stir in the minced garlic, ketchup, Worcestershire sauce, brown sugar, chili powder, paprika, and cayenne pepper. Season with salt and black pepper. Bring to a simmer and cook for 10-15 minutes, stirring occasionally, until the sauce has thickened.
