2 pieces flatbread
1 medium zucchini
1 medium bell pepper
0.5 medium red onion
1 cup cherry tomatoes
3 tbsp olive oil
1 tsp garlic powder
0.5 tsp dried oregano
0.5 tsp salt
0.25 tsp black pepper
1 cup mozzarella cheese
0.25 cup fresh basil

Instructions

    Preheat grill to medium-high heat (about 400°F). Slice zucchini and bell pepper into 1/4-inch thick rounds or strips. Cut red onion into wedges.

    Toss the prepared vegetables with 2 tbsp olive oil, garlic powder, oregano, salt, and pepper.

    Grill the vegetables for 5-7 minutes per side, until tender and slightly charred. Add cherry tomatoes during the last 2 minutes of grilling.

    Brush the flatbreads with the remaining 1 tbsp olive oil. Grill for 1-2 minutes per side until lightly toasted.
