
Spiced Chickpea Fritters

Rinse and drain the chickpeas.

Finely chop the onion.

Mince the garlic cloves.

Chop the fresh cilantro.

In a large bowl, mash the chickpeas with a fork or potato masher until mostly broken down but still slightly chunky.

Add the chopped onion, minced garlic, chopped cilantro, all-purpose flour, ground cumin, ground coriander, ground turmeric, cayenne pepper, baking powder, salt, and black pepper to the mashed chickpeas.

Mix all ingredients until well combined, forming a thick batter.

Heat the vegetable oil in a large skillet over medium heat.

Once the oil is hot, drop spoonfuls of the chickpea mixture into the skillet, flattening them slightly with the back of the spoon to form fritters. Do this in batches, being careful not to overcrowd the pan.

Remove fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.
