
Apple Cider Donuts

Instructions
In a large bowl, whisk together 2.5 cups all-purpose flour, 0.5 cup granulated sugar, 2 tsp baking powder, 1 tsp ground cinnamon, 0.25 tsp ground nutmeg, and 0.5 tsp salt.
In a separate bowl, whisk together 1 whole egg, 0.5 cup apple cider, 2 tbsp melted butter, and 1 tsp vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Turn the dough out onto a lightly floured surface and gently pat or roll it to 0.5 inch thickness.
Cut out donuts using a donut cutter or two different-sized round cutters.
Heat 3 cups vegetable oil in a heavy-bottomed pot or Dutch oven to 375 degrees Fahrenheit.
Carefully fry donuts in batches for 2 minutes per side, until golden brown.

Remove donuts with a slotted spoon and drain on paper towels.
In a small bowl, combine 0.75 cup granulated sugar and 1.5 tsp ground cinnamon for the coating.
While still warm, toss the donuts in the cinnamon sugar mixture.
