1 lb salmon
0.75 cup panko breadcrumbs
1 large egg
0.25 cup mayonnaise
1 small jalapeno
2 tbsp fresh cilantro
1 tsp lime zest
0.5 tsp chili powder
1 tsp salt
0.5 tsp black pepper
3 tbsp vegetable oil
0.5 cup plain yogurt
1 tbsp lime juice

Finely mince the jalapeno. Flake the salmon into a bowl. Add panko, egg, mayonnaise, minced jalapeno, cilantro, lime zest, chili powder, 0.5 tsp salt, and 0.25 tsp pepper. Mix gently.
