1.5 lbs chicken breast
1 medium lemon
3 cloves garlic
2 tbsp olive oil
1 tsp dried oregano
0.5 tsp dried thyme
1 tsp salt
0.5 tsp black pepper
0.5 cup chicken broth

Instructions

    Cut chicken breasts into bite-sized pieces. Mince garlic. Zest half the lemon and then juice the entire lemon.

    In a bowl, toss chicken pieces with 1 tbsp olive oil, oregano, thyme, 0.5 tsp salt, and 0.25 tsp black pepper.

    Heat the remaining 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes, until browned and cooked through.

    Add minced garlic to the skillet and cook for 1 minute until fragrant.

    Pour in chicken broth, lemon juice, and lemon zest. Bring to a simmer and scrape up any browned bits from the bottom of the skillet.
