1.5 lbs chicken breast
0.5 cup mayonnaise
0.5 cup parsley
0.25 cup chives
0.25 cup tarragon
2 tbsp lemon juice
1 clove garlic
1 tsp salt
0.5 tsp black pepper
4 count sandwich buns
1 tbsp olive oil

    Prepare the Green Goddess dressing: In a food processor, combine mayonnaise, parsley, chives, tarragon, lemon juice, and garlic. Process until smooth. Season with salt and pepper.

    Slice chicken breasts horizontally into thinner cutlets. Season both sides with salt and pepper.

    Heat olive oil in a large skillet over medium-high heat. Cook chicken cutlets for 4-5 minutes per side, until golden brown and cooked through.
