
Cherry Tomato Confit Toasts

Preheat oven to 300°F. Place cherry tomatoes and whole garlic cloves in a small oven-safe dish.

Pour olive oil over tomatoes and garlic, ensuring they are mostly submerged. Season with 1 tsp salt and 0.25 tsp black pepper.

Cover the dish and bake for 45-55 minutes, or until tomatoes are softened and slightly collapsed.

Remove from oven. Allow to cool slightly. Remove garlic cloves. Gently mash some of the tomatoes with a fork.

Slice the baguette into 1/2-inch thick rounds. Brush lightly with some of the confit oil. Toast in the oven or a pan until golden brown.

Spread a layer of ricotta cheese on each toasted baguette slice.

Top the ricotta with the confit cherry tomatoes and garlic.
