2 cans canned butter beans
2 tbsp olive oil
1 medium shallot
4 cloves garlic
0.5 cup sun-dried tomatoes
1 cup vegetable broth
0.75 cup heavy cream
0.5 cup parmesan cheese
0.25 tsp red pepper flakes
0.25 cup fresh basil
1 tsp salt
0.5 tsp black pepper

Instructions

    Drain and rinse the butter beans. Finely chop the shallot and mince the garlic. Chop the sun-dried tomatoes.

    Heat olive oil in a large skillet over medium heat. Add the chopped shallot and cook for 3-4 minutes until softened.

    Add the minced garlic and red pepper flakes to the skillet and cook for 1 minute until fragrant.
