Prepare the peach salsa: Dice the peaches, finely chop the red onion and jalapeno (remove seeds for less heat). Chop the cilantro.

In a medium bowl, combine the diced peaches, red onion, jalapeno, and cilantro.

Squeeze the juice of one lime over the salsa ingredients. Add 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir gently to combine.

Marinate the pork tenderloin: Pat the pork tenderloin dry with paper towels. In a small bowl, whisk together the remaining 2 tablespoons of olive oil, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 tablespoon of honey. Rub this mixture all over the pork tenderloin.
