
Balsamic Glazed Chicken with Burst Cherry Tomatoes
Tender pan-seared chicken breasts coated in a tangy balsamic glaze, served with sweet, burst cherry tomatoes and fresh basil. A simple yet elegant weeknight meal.

Pat the chicken breasts dry and season generously with salt and black pepper.

Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.

Add the remaining 1 tbsp of olive oil to the skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Add the cherry tomatoes and balsamic vinegar to the skillet. Cook, stirring occasionally, for 5-8 minutes, or until the tomatoes have burst and the sauce has thickened into a glaze.

Return the chicken to the skillet and spoon the balsamic tomato glaze over the top. Garnish with fresh basil.
