
Creamy Pesto Gnocchi

While gnocchi cooks, mince the garlic.

Cook gnocchi according to package directions. Drain, reserving about 1/2 cup of pasta water.

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Pour in heavy cream and bring to a gentle simmer. Stir in basil pesto and parmesan cheese. Cook for 2-3 minutes, stirring until cheese is melted and sauce is smooth.

Add the cooked gnocchi to the skillet. Toss to coat evenly with the creamy pesto sauce. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached. Season with salt and black pepper.
