
Classic Lentil and Sausage Soup

In a large pot or Dutch oven, heat olive oil over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage and set aside, leaving drippings in the pot.

Add the chopped onion, carrots, and celery to the pot. Cook, stirring occasionally, until softened, about 5-7 minutes.

Stir in the minced garlic and cook for 1 minute more until fragrant.

Return the browned sausage to the pot. Add the rinsed brown lentils, diced tomatoes (undrained), chicken broth, water, dried thyme, and bay leaf.

Bring the soup to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes, or until lentils are tender.

Remove the bay leaf. Season with salt and black pepper to taste.

This recipe is designed for a stovetop. For a slow cooker version, combine all ingredients (except olive oil for browning sausage) in the slow cooker and cook on low for 6-8 hours or high for 3-4 hours. Brown sausage and sauté vegetables separately before adding to slow cooker for best flavor.
