1 ½ cup lentils
6 cup vegetable broth
1 medium onion
3 cloves garlic
1 medium bell pepper
1 can (14.5 oz) diced tomatoes
2 tbsp olive oil
1 tsp chili powder
1 tsp cumin
¼ tsp cayenne pepper
1 tsp salt
½ tsp black pepper

Rinse the lentils under cold water.

Chop the onion, mince the garlic, and dice the bell pepper.

Heat olive oil in a Dutch oven over medium heat. Add onion and bell pepper. Sauté for 6-8 minutes until softened.

Add minced garlic, chili powder, cumin, and cayenne pepper. Cook for 1 minute, stirring constantly, until fragrant.

Stir in the rinsed lentils, diced tomatoes (with their juice), and vegetable broth. Bring to a boil.
