1 lbs beef sirloin
4 cups broccoli florets
0.5 cup soy sauce
0.25 cup beef broth
2 tbsp cornstarch
1 tbsp sesame oil
3 cloves garlic
1 inch ginger
2 tbsp vegetable oil
1 tsp sugar
0.5 tsp salt
0.25 tsp black pepper

Instructions

    Slice beef sirloin thinly against the grain. In a bowl, toss beef with 1 tbsp soy sauce, 1 tbsp cornstarch, salt, and pepper. Let marinate for 10 minutes.

    Mince garlic and grate ginger. In a separate bowl, whisk together remaining soy sauce, beef broth, remaining cornstarch, sesame oil, and sugar until smooth.

    Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add marinated beef and stir-fry until browned, about 2-3 minutes. Remove beef from skillet and set aside.

    Add remaining 1 tbsp vegetable oil to the skillet. Add garlic and ginger and stir-fry for 30 seconds until fragrant.

    Add broccoli florets and stir-fry for 3-5 minutes until tender-crisp. Add a splash of water if needed to steam.

    Return beef to the skillet. Pour the prepared sauce over the beef and broccoli. Stir constantly until the sauce thickens, about 1-2 minutes.
