Instructions

  1. 1

In a large bowl, whisk together flour, 1 tablespoon of sugar, cinnamon, and nutmeg.

  2. 2

Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces.

  3. 3

Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Do not overmix.

  4. 4

Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

  5. 5

While the dough chills, peel, core, and slice the apples. In a separate bowl, toss the apple slices with the remaining granulated sugar, lemon juice, and a pinch of cinnamon if desired.

  6. 6

    Preheat oven to 375°F.

  7. 7

On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to a parchment-lined baking sheet.

  8. 8

Arrange the apple slices in the center of the dough, leaving a 2-inch border. Fold the border up and over the edges of the apples.

  9. 9

In a small bowl, whisk together the egg and milk to create an egg wash. Brush the crust evenly with the egg wash.

  10. 10

Bake for 30-40 minutes, or until the crust is golden brown and the apples are tender.
