In a large bowl, whisk together flour, 1 tablespoon of sugar, cinnamon, and nutmeg.

Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces.

Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Do not overmix.

Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

While the dough chills, peel, core, and slice the apples. In a separate bowl, toss the apple slices with the remaining granulated sugar, lemon juice, and a pinch of cinnamon if desired.
