2 medium sweet potatoes
1 lb breakfast sausage
1 medium yellow onion
1 medium red bell pepper
2 clove garlic
2 tbsp olive oil
1 tsp smoked paprika
½ tsp cumin
¼ tsp cayenne pepper
1 tsp salt
½ tsp black pepper
1 large avocado
1 tbsp lime juice
¼ cup cilantro

    Peel and dice the sweet potatoes into 1/2-inch cubes. Finely chop the onion and red bell pepper. Mince the garlic.

    In a large skillet, cook the breakfast sausage over medium-high heat until browned and crumbled. Drain off most of the grease, leaving about 1 tablespoon in the skillet.

    Add the diced sweet potatoes, chopped onion, and bell pepper to the skillet with the sausage. Cook for 10-12 minutes, stirring occasionally, until the sweet potatoes are tender and the vegetables have softened.
