2 cup cooked brown lentils
1 cup cherry tomatoes
1 medium cucumber
0.5 small red onion
0.25 cup fresh parsley
3 tbsp olive oil
2 tbsp lemon juice
1 tsp dijon mustard
0.5 tsp salt
0.25 tsp black pepper

If lentils are not pre-cooked, cook 1 cup of brown lentils according to package directions and let cool.

Halve the cherry tomatoes. Dice the cucumber and red onion. Chop the fresh parsley.

In a large bowl, combine the cooked lentils, cherry tomatoes, cucumber, red onion, and parsley.
