
Apple Cider Braised Pork Chops

Pat the pork chops dry and season generously with salt and pepper.

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear the pork chops for 3-4 minutes per side until golden brown. Remove chops from the skillet and set aside.

Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.

Pour in the apple cider and chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the Dijon mustard, maple syrup, and dried thyme. Bring to a simmer.

Return the pork chops to the skillet, nestling them into the liquid. Add the sprig of fresh rosemary. Cover the skillet, reduce heat to low, and simmer for 30-35 minutes, or until pork chops are cooked through and tender. The internal temperature should reach 145F.

Remove the pork chops from the skillet and let them rest for a few minutes. If the sauce is too thin, increase heat to medium-high and simmer for a few minutes until slightly reduced.
