12 oz linguine
1 lb shrimp
3 tbsp olive oil
4 clove garlic
2 tbsp butter
½ cup dry white wine
¼ cup lemon juice
¼ cup parsley
¼ tsp red pepper flakes
1 tsp salt
½ tsp black pepper

Instructions

    Cook linguine according to package directions. Reserve about 1 cup of pasta water before draining.

    While the pasta cooks, peel and devein the shrimp if necessary. Pat them dry.

    Mince the garlic cloves.

    Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 1-2 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.

    Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and red pepper flakes, and cook until fragrant, about 30 seconds, being careful not to burn the garlic.

    Pour in the dry white wine and lemon juice. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the pan.

    Add the drained linguine to the skillet. Toss to coat with the sauce. Add the cooked shrimp back to the skillet. Toss everything together. If the sauce seems too thick, add some of the reserved pasta water, a little at a time, until the desired consistency is reached.

    Stir in the chopped fresh parsley. Season with salt and black pepper to taste.
