
Classic Apple Hand Pie
Flaky pastry filled with sweet, spiced apples. A delightful portable treat.

In a large bowl, combine flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water, mixing until dough just comes together. Divide dough in half, flatten into discs, wrap in plastic, and chill for at least 30 minutes.

Peel, core, and dice apples. In a separate bowl, toss apples with sugar, cinnamon, nutmeg, lemon juice, and 1 tbsp of flour.

Preheat oven to 375°F. Line a baking sheet with parchment paper.

On a lightly floured surface, roll out one disc of dough to about 1/8-inch thickness. Cut into 6-inch circles. Repeat with the second disc.

Place about 1/4 cup of apple filling onto one half of each dough circle, leaving a 1/2-inch border. Moisten the edges with water. Fold the other half of the dough over the filling to create a half-moon shape. Crimp the edges with a fork to seal.

Place hand pies on the prepared baking sheet. Cut a few slits in the top of each pie to allow steam to escape.

In a small bowl, whisk together the egg and 1 tbsp water for the egg wash. Brush the tops of the hand pies with the egg wash.

Bake for 25-30 minutes, or until golden brown and bubbly.
