2 lbs chicken thighs
2 lbs potatoes
1 large lemon
4 cloves garlic
0.5 cup olive oil
2 tbsp dried oregano
1.5 tsp salt
0.5 tsp black pepper
0.25 cup fresh parsley

Instructions

    Preheat oven to 400°F.

    Wash and chop potatoes into 1-inch cubes. Mince garlic. Zest the lemon, then cut it in half.

    In a large bowl, combine chicken thighs, potatoes, minced garlic, olive oil, lemon zest, lemon juice from half the lemon, dried oregano, salt, and pepper. Toss to coat everything evenly.

    Arrange the chicken and potatoes in a single layer on a large baking sheet.

    Bake for 40-50 minutes, or until chicken is cooked through and potatoes are tender and golden brown, flipping halfway through.
