8 oz spaghetti
0.5 cup peanut butter
0.25 cup soy sauce
2 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp honey
2 cloves garlic
1 inch ginger
0.5 tsp red pepper flakes
2 tbsp water
1 medium carrot
0.5 large cucumber
1 medium bell pepper
3 stalks scallions
0.25 cup cilantro

Instructions

    Cook spaghetti according to package directions. Drain and rinse with cold water.

    While noodles cook, prepare the dressing. In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, minced garlic, grated ginger, red pepper flakes, and 2 tablespoons of water until smooth.

    Prepare the vegetables. Julienne the carrot, slice the cucumber into half-moons, thinly slice the bell pepper, and chop the scallions and cilantro.

    In a large bowl, combine the cooled spaghetti, julienned carrot, cucumber slices, sliced bell pepper, chopped scallions, and chopped cilantro.
