1 lb ground beef
0.5 piece onion
2 clove garlic
0.25 cup fresh parsley
1 tsp ground cumin
0.5 tsp ground coriander
1 tsp salt
0.5 tsp black pepper
2 tbsp olive oil
1.5 cup rice
3 cup water
1 cup plain yogurt
1 tbsp lemon juice
0.5 piece cucumber
2 tbsp fresh mint

Instructions

    Finely chop the onion, mince the garlic, and chop the fresh parsley. In a mixing bowl, combine the ground beef, chopped onion, minced garlic, parsley, cumin, coriander, salt, and pepper. Mix gently with your hands until just combined.

    Form the beef mixture into 12-16 oval-shaped kofta. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the kofta in batches until browned on all sides, about 6-8 minutes total. Remove from skillet and set aside.

    While the kofta cooks, prepare the rice. Rinse the rice under cold water. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until water is absorbed and rice is tender. Fluff with a fork.

    Prepare the yogurt sauce. In a small bowl, whisk together the plain yogurt, lemon juice, and a pinch of salt.

    Prepare the cucumber salad. Dice half a cucumber and mix with chopped fresh mint and a pinch of salt.
