2 salmon fillet
½ cup sweet chili sauce
1 tbsp soy sauce
1 tsp sesame oil
1 clove garlic
½ inch ginger
1 cup rice
2 cup water
½ cucumber
2 stalk scallion
¼ cup cilantro
½ lime
1 tbsp vegetable oil

Instructions

    Cook the rice according to package directions. While the rice is cooking, prepare the glaze and salmon.

    In a small bowl, whisk together sweet chili sauce, soy sauce, sesame oil, minced garlic, and grated ginger. Set aside half of this mixture for serving.

    Pat the salmon fillets dry. Brush them generously with half of the prepared sweet chili glaze.

    Heat vegetable oil in a skillet over medium-high heat. Sear the salmon fillets, skin-side down first if applicable, for about 4-5 minutes per side, or until cooked through and caramelized.

    While the salmon is cooking, thinly slice the cucumber and scallions, and chop the cilantro.
