1 ½ cup lentils
6 cup vegetable broth
1 medium onion
2 cloves garlic
2 medium carrots
2 medium celery stalks
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp dried thyme

Instructions

Rinse the lentils thoroughly under cold water.

Finely chop the onion, mince the garlic, dice the carrots, and dice the celery.

Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes until softened.

Add the minced garlic and dried thyme. Cook for 1 minute more until fragrant.

Stir in the rinsed lentils and vegetable broth. Bring to a boil.
